Cooking Tips: One tablespoon of cornstarch equals two tablespoons of flour. Use for thickening gravies, sauces, stews, and soups. If the recipe calls for flour, use half as much cornstarch to thicken. When thickening hot liquids, mix cornstarch with a small amount of cold water until smooth, then stir into hot liquid. Stir constantly until liquid comes to a boil. Continue cooking, stirring constantly, about one minute. Cornstarch mixes with cold water more easily than flour does and will result in creamier, smoother gravies and sauces.
